Energize your body with the proper snack!

I was volunteering at a fencing competition when the parent of a young fencer asked me if I had any ideas for energy snacks her son could have that were healthy, not full of artificial sugar and that was vegan. I thought… challenge accepted!

I tried out a number of ideas; some worked really well, some really, really did not. I thought I would share my favorite recipe with you all now as we are coming into the very wet, typical Vancouver winter season where we all just want to comfort eat and hide from the rain. This way you can have some guilt-free, gluten-free, artificial sugar-free vegan bliss bites.  To me, these taste like Ferrero Rocher without the added sugar.

This is an extremely simple recipe with only 3 ingredients, 15 min. prep time and no cooking time! They are suitable for vegan, paleo and raw food diets. They are great as a comfort food snack or an energy snack for those busy days.

Ingredients:

70g walnuts

80g dates

50g hazelnut butter (Not the chocolate kind. Plain, raw, hazelnut butter)

Directions:

Place all the ingredients into a blender and blitz until it looks like mush.

Unplug blender, scoop it out and roll into bite-size balls.

Place on greaseproof paper and pop into the refrigerator for 30mins.

Enjoy!

Top Tipif your blender is not powerful enough, blend each ingredient separately and then mix together in a bowl.
